Santa Fe Black Bean Salad

Ingredients (serves 4-6)

2 cups cooked black beans
1 cup cooked corn kernels
1/2 cup green bell pepper, diced small
1/2 cup red bell pepper, diced small
1/2 cup red onion, diced small
1/4 cup lime juice, fresh
1/4 cup vegetable oil
2 Tbsp. fresh cilantro, chopped fine
1 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. cayenne pepper (optional)

Preparation:

1. Combine oil, lime juice, cilantro, cumin, salt, and cayenne pepper in a medium bowl. Whisk to make teh dressing.

2. Add preparted vegetables and fold with a spatula until coated with dressing. Let stand at room temperature fo 30 minutes for best flavor, mixing occasionally. Taste and adjust as needed. A little squeeze of lime just before serving kicks up the flavor.
